Spicy Asian Lettuce Wraps

1 lb. boneless, skinless chicken breasts, cubed
3 T. oil
2-3 c a frozen stir fry veggie mix
2 T. chili-garlic sauce
2 T. soy sauce
2 garlic cloves, minced
1 T. sugar
2 T. peanut butter
2 T. water

1 1/2 c. grated carrots
1/4 c. green onions, chopped
2 T. finely chopped cilantro
1/3 c. peanuts, chopped

8 lg. leaves Bibb or Iceberg lettuce

Cook chicken in oil, add stir fry veggies, then sauces, garlic, sugar, peanut butter and water. Simmer a bit, remove from heat and mix in remaining ingredients. Spoon mixure into lettuce leaves. Serve immediately.

Roasted Banana Bars (w/Browned Butter-Pecan Frosting)

Bars:

2 c sliced ripe bananas (about 3 medium)

1/3 c packed dark brown sugar

1 TBS butter, chilled and cut into small pieces

2 ¼ c flour

¾ tsp baking soda

½ tsp baking powder

¼ c nonfat buttermilk

1 tsp vanilla

½ c butter, softened

1 ¼ c granulated sugar

2 large eggs

Baking spray w/four

Frosting:

¼ c butter

2 c powdered sugar

1/3 c (3 oz) 1/3 less-fat cream cheese, softened

1 tsp vanilla

¼ c chopped pecans, toasted

1. Preheat oven to 400^F

2. To prepare bars, combine banana, brown sugar, and 1 TBS butter in an 8-inch square baking dish. Bake at 400^F for 35 minutes, stirring after 17 minutes. Cool slightly.

3. Reduce the oven temperature to 375^F.

4. Combine flour, soda, and baking powder in a medium bowl. Combine banana mixture, buttermilk, and 1 tsp vanilla in another bowl. Place ½ c butter and granulated sugar in a large bowl; beat with a mixer at medium speed until well blended. Add eggs to granulated sugar mixture; mix well. Add flour mixture to sugar mixture alternating with banana mixture, beginning and ending with flour mixture.

5. Pour batter into a 9x13-inch baking pan coated with baking spray. Bake at 375^F for 20 minutes or until a wooden pick inserted in center comes out clean. Cool completely in pan on wire rack.

6. To prepare frosting, melt ¼ c butter in a small saucepan over medium heat; cook 4 minutes or until lightly browned. Cool slightly. Combine browned butter, powdered sugar, cream cheese, and vanilla in a medium bowl; beat with a mixer until smooth. Spread frosting over cooled bars. Sprinkle with pecans.

Yield: 2 dozen (bars)

Smothered Chicken

Ingredients
chicken breasts
chicken spices (garlic powder, onion powder, salt and pepper)
bacon or bacon bits
grated cheddar cheese
mushrooms (for those who like it

Pound chicken until thin, in a skillet over medium heat cook chicken like normal, seasoning both sides. Once chicken is cooked thoroughly place mushrooms, cooked bacon cut up (or bacon bits) and mushrooms on top of each breast, then cover with desired amount of grated cheddar cheese. Cover the skillet and remove from heat, set aside to melt the cheese. Then do this next step:

Honey Mustard

1/3 cup mayonnaise
1 tablespoon prepared mustard
1 tablespoon honey
1/2 tablespoon lemon juice

mix together, place a good amount on a plate the size of the chicken breast, place cooked and cheese melted chicken on top of the honey mustard and enjoy!

Dad's Cream Puffs

½ C. Butter
1 C. Flour
½ t. Salt
4 Eggs

Melt butter in 1 cup of boiling water, add all flour (and salt) and stir vigioursly. Cook and stir till mix forms a ball that doesn’t separate. Remove from heat, cool slightly then add eggs one at a time, beat until smooth. Then take a heaping Tablespoon and place 3 in apart on greased cookie sheet.

Bake @ 450° for 15 mins, reduce to 325° and bake for 25 more minutes. Remove and slice open each puff, turn off oven and put back in cooling oven to dry (watch for no more shinny spots).  

For filling, 1 package of your choice of instant pudding, mix with whipped cream if desired. Sprinkle powder sugar on top. 
Makes 10. 


Strawberry Filled Cheesecake


Strawberry Filled Cheesecake
Strawberry Filling
2 ½ C.    Strawberries (Frozen or fresh, whole or chopped)
½  C.       Sugar
2 ½ T.     Cornstarch

Stir to boiling and boil for 2 minutes, stirring constantly. Cool completely.

Crust
11 oz      Shortbread cookies (or graham crackers) finely crushed
3 T.         Butter melted
2 T.         Water
1 t.          Vanilla

Blend cookies until almost tasty, add rest of ingredients. Slightly grease a spring form pan. Put crust in pan and press 1 ¾ inch up the sides. Refrigerate for 15 minutes, bake for 10 minutes @ 350°. Reduce heat to 325°, melt 2 oz of semi sweet chocolate and spread on bottom of crust. Chill for 10 minutes.

Cream Cheese Mixture*
4 pkgs 8 oz          Cream cheese
1 ½ C.                    Sugar
4                              Eggs
2 t.                          Vanilla

Beat the cream cheese alone really good then add sugar and beat for a long time. Then add one egg at a time until blended, mix in vanilla. Place half of cream cheese mixture in pan and bake for 35 minutes at 325°. Remove from oven and cool for 20 minutes, then but the strawberry filling in the pan and bake for 15 minutes. Remove from oven and add the rest of the cream cheese mixture and bake for 50 minutes. (to prevent cracking try having a pan with water in the over and cracking the oven door just a tiny bit)

Cool completely then remove sides of spring form pan. Garnish with chocolate striped across the top and serve with white chocolate dipped strawberries. Store in refrigerator.

*Note: the spring form pan I have was a little small for this recipe, it fit but almost when over the top while cooking. To prevent this the next time I just 3/4ed the cream cheese mixture and reduce cook time by 5 minutes in each step during the cream cheese part. Turned out great.


Plain Cheese Cake
Follow above recipe, omit strawberry filling and cook entire cream cheese mixture in the crust for 1 hour at 325°.
