Spicy Asian Lettuce Wraps

1 lb. boneless, skinless chicken breasts, cubed
3 T. oil
2-3 c a frozen stir fry veggie mix
2 T. chili-garlic sauce
2 T. soy sauce
2 garlic cloves, minced
1 T. sugar
2 T. peanut butter
2 T. water

1 1/2 c. grated carrots
1/4 c. green onions, chopped
2 T. finely chopped cilantro
1/3 c. peanuts, chopped

8 lg. leaves Bibb or Iceberg lettuce

Cook chicken in oil, add stir fry veggies, then sauces, garlic, sugar, peanut butter and water. Simmer a bit, remove from heat and mix in remaining ingredients. Spoon mixure into lettuce leaves. Serve immediately.
